New Zealand born Darren Elmes brings over 26 years cookery experience to iconic Ravesi's restaurant and bar dining experiences, including luxurious Drift cocktail lounge.
Having worked extensively throughout New Zealand in the 90s, and more recently in Sydney as Wildfire's Executive Sous Chef, Darren has amassed a wealth of experience cooking a huge variety of cuisines.
In the latter part of this year Darren charted a new culinary course for Ravesi's; and under his direction a ‘tapas' style menu emerged. Blending an exciting mix of Australasian flavours with influences from Latin America and the Mediterranean, Ravesi's restaurant now offers delicious pizzas, homemade pastas, delicate Asian inspired fare and the best seafood in the world - Australian of course!
With an exclusive Drift menu designed to complement exotic cocktail flavours local seafood favourites such as mixed seasonal oysters available ‘5 ways'; small plates of Trout and ginger dumplings, duck pancakes, Hiramasa Kingfish sashimi; shared dishes of cheese $25; and six gourmand pizzas from across the globe, Darren has ensured an exceptional dining experience also awaits Drift's guests.
